상하이 볶음면 병원균 기준치 검출

식품환경위생국 산하 식품안전센터(CFS)는 7월 28일 상하이식 볶음면 샘플에서 병원균인 클로스트리디움 퍼프링겐스가 기준치 이상으로 검출되었다고 발표했다.

 CFS는 이번 사건에 대해 후속 조치를 취하고 있다.

식품안전센터는 콰이청에 위치한 한 간이식당에서 해당 샘플을 수거하여 검사한 결과, 샘플에서 클로스트리디움 퍼프링겐스가 그램당 95,000마리로 검출되었다. 

식품미생물지침에 따르면, 즉석식품에서 클로스트리디움 퍼프링겐스가 그램당 10,000마리 이상 검출될 경우 부적합 판정을 받게 된다.

클로스트리디움 퍼프링겐스는 환경에 널리 분포되어 있다. 특히 대량으로 조리된 음식, 특히 조리 후 장시간 냉장 보관된 육류 및 가금류 요리는 감염 위험이 높다. 클로스트리디움 퍼프링겐스에 과량 오염된 음식을 섭취하면 복통, 설사 등의 증상이 나타날 수 있다. 

CFS Detects Excessive Pathogen in Shanghai Fried Noodle Sample  

The Centre for Food Safety (CFS) under the Food and Environmental Hygiene Department announced on July 28 that a sample of Shanghai-style fried noodles contained excessive levels of the bacterial pathogen Clostridium perfringens. The CFS is actively following up on the case and conducting investigations.  

Key Test Findings & Public Health Details

• Sampling Location & Test Results:

  The sample was collected from a licensed light refreshment restaurant in Kwai Chung. Laboratory testing revealed a Clostridium perfringens count of 95,000 organisms per gram.  

• Regulatory Standard:

  According to Hong Kong's Microbiological Guidelines for Food, ready-to-eat food containing more than 10,000 organisms per gram of Clostridium perfringens is classified as unsatisfactory.  

• Health Risks & High-Risk Foods:

  Clostridium perfringens is widespread in the environment. Foods prepared in bulk—especially cooked meat and poultry dishes that undergo a long cooling period at ambient temperatures—carry a high risk of contamination. Ingestion of food contaminated with high levels of this pathogen can lead to gastrointestinal symptoms such as abdominal pain and diarrhea.  

• Follow-up Actions:

  The CFS instructed the restaurant to immediately cease sales and discard the affected item. Officials also provided food hygiene education to the staff and mandated thorough cleaning and disinfection of the premises.
